Quick and easy to make
Use any combination of fruit

Ingredients

300g mixed fruit
100g sugar
100g soft margarine or butter
125ml water
1 beaten egg (large)
200g self raising flour

Anytime Fruit Cake

Simmer, stir, bake, eat
Couldnt be simpler

Method

Place fruit, sugar, margarine and water in a pan
Simmer slowly with lid on for 20 minutes
Allow to cool
Add beaten egg
Stir in flour
Transfer mixture to greased and lined 15-18cm cake tin
Bake for 1.5 hours at 300F (150C) or until a skewer comes out clean
